Beef & Potato Stew

This robust stew builds its foundation on Adriana's signature adobo chile blend, creating layers of smoky heat that permeate tender chunks of beef.
  • 40 g Adriana’s Adobo Chile mix,
  • 1 Pound beef for stew
  • 1.5 litres (4 cups) water
  • 3 to 4 stalks of green onion chopped
  • 2 large Russet potatoes or 3 medium cut in bite sizes
  • 2 cups roasted tomatoes
  • 1/2 cup chopped cilantro (optional)
  • Sea salt to taste

Directions:

  1. Heat oil in a medium size pot. Brown meat together with Adriana’s Adobo Chile mix. Add water and bring to a boil.
  2. Incorporate onions, and tomatoes. Reduce heat and cook slowly uncovered for 25 minutes.
  3. Add the potatoes and cook until completely cooked and soft to the touch. 25 more minutes.
  4. Seasoned with sea salt if needed.
